4 ingredient dessert!

Do you ever have a crazy sweet tooth but don't feel like spending a lot of time in the kitchen to make something? Well, I have the best recipe for you!


Fruit pie filling!


Yup, that's right. The delicious, ooey, gooey stuff in the middle of a fruit pie. Only 4 ingredients and takes less than 10 minutes to make. My favorite version of this is cherry, but you can really go crazy with the types of fruit or combinations you make. It is also a great seasonal recipe. The other thing I love about this recipe is there are a few variations on how I serve it. Here are some of the ways I've dished this quick dessert up:


  • fruit pie filling, served with a spoon

  • top vanilla ice cream with a big spoonful of fruit pie filling

  • make pie dough chips with fruit pie dip

  • fruit hand pies


When I owned my bakery, the cherry hand pies would sell out in no time! I may have eaten a few too before they made it to the farmers market.

Ingredients:

  1. 2.5 cups of frozen fruit (examples: cherry, blueberry, peach)

  2. 1/4 cup sugar

  3. 1.5 tablespoons cornstarch

  4. 1 tablespoon lemon juice (optional...I'll admit I often don't have this on hand and will make it without. But the lemon juice does really add a nice pop of acidity to the fruit)


Directions:

  1. Add all of the ingredients together in a sauce pan.

  2. Turn the stove top on to medium heat, stirring occasionally.

  3. Continue to stir until the mixture begins to break down some and thickens.

  4. Remove from heat once the mixture reaches the desired consistency, usually about 10 minutes.

  5. Pour into a bowl and serve!


Yes, it really is that simple. You didn't believe me, did you?


Here is a picture from the farmers market. On the left are chocolate hazelnut twists and on the right are cherry, blueberry, and apple hand pies with a vanilla glaze drizzle. Yummy!!!
